As a postscript to my previous post about connecting Bluetooth speakers: Getting PulseAudio to switch to the newly connected speakers as the output (and the device receiving ‘Volume Up/Down’ directions from media keys) is simply adding a line to the default pulseaudio profile. Edit /etc/pulse/default.pa, add this line and reboot:
load-module module-switch-on-connect
